Source of chia seeds. Used by the indigenous peoples of the SW U.S., Central and South America to increase endurance on long journeys. The seeds contain a high amount of protein and are extensively utilized as flour meal and in making beverages. Thick, glurp mucilaginous beverages. Try it! Seeds are up to 55% oil which contains omega-3 fatty acids and a-linolenic acid. They contain anti-oxidants, amino acids and a long list of vitamins and minerals. This may have been as important a food crop as maize was to the Aztecs until it was banned by their Spanish conquerors. In 2008 Australia was the world's largest producer of the seed.
