A plant with stimulant and anti-bacterial action; small doses of grated root stimulate digestion and make the popular horseradish sauce when mixed with vinegar. Dried leaves yield a yellow dye and have been used to dress wounds. It will grow in any soil but plant it in loose rich soil to increase root size and to facilitate harvesting. Isolate it from the main garden as it spreads vigorously from any root pieces you leave behind. Reputedly makes potatoes more disease resistant when planted nearby (that would be companion planting).
