In our area this plant provides the bright blue flowers which grow along every roadside for much of the growing season. The roots are roasted and ground as a coffee substitute or additive (Luzian brand coffee) while the shoots may be eaten either in salad or as a cooked green. The root has been used as a diuretic, a laxative, and to treat fevers and jaundice along with a host of other ailments. Reported to lower cholesterol and blood sugar levels.
